- 4 croissants
- 150 g sugar
- 200 g ground almonds
- 150 g butter
- 2 whole eggs
- Early Grey tea
- Bitter almond extract
- A few flaked almonds
Preparation steps
- Melt the butter, and infuse the Early Grey, ensuring it stays warm.
- Sieve the mixture.
- Add the sugar and mix.
- Mix in the eggs one by one followed by the ground almonds and a few drops of almond extract.
- Slice the day-old croissants in two.
- Fill with the Early Grey almond cream.
- Coat the top with the Early Grey almond cream and decorate with a few flaked almonds.
- Bake for 20 min at 170°C.
