  • 4 croissants 
  • 150 g sugar 
  • 200 g ground almonds 
  • 150 g butter 
  • 2 whole eggs
  • Early Grey tea 
  • Bitter almond extract
  • A few flaked almonds

  • Melt the butter, and infuse the Early Grey, ensuring it stays warm. 
  • Sieve the mixture. 
  • Add the sugar and mix. 
  • Mix in the eggs one by one followed by the ground almonds and a few drops of almond extract. 
  • Slice the day-old croissants in two. 
  • Fill with the Early Grey almond cream. 
  • Coat the top with the Early Grey almond cream and decorate with a few flaked almonds. 
  • Bake for 20 min at 170°C.
